Steamed veggies with tofu

A relatively simple and nutritious meal with a kick ass sauce full of delicious contrasting flavours that you will absolutely love! Do not attempt this if you suspect you have a peanut allergy. You can try replacing the peanut butter with tahini.

Serves 4


Here’s what you need

2 cups of chopped butternut squash or sweet potato

4 cups of other chopped veggies of your choice- I used broccoli, courgettes, green beans and celery

1 tablespoon of chopped ginger

1 clove of garlic

1 stalk of celery

1.5 tablespoons of tamari

1/2 tablespoon of honey

juice of half a lemon

1 cup coconut milk (cream) or creamed coconut

4 tablespoons of peanut butter. You could try with tahini if allergic to peanuts

1-2 cups of boiling water for the sauce

1 teaspoon of curry powder

1 cup of short grain brown rice or use any other grain of choice. Quinoa would be another good option

2.5 cups of boiling water for the rice

1 packet of tofu. I used fermented tofu as this is even healthier. You could use tempeh also.

Method

If you are able to plan ahead then soak the rice for a few hours to increase digestibility. Otherwise just clean well, drain and cover with 2.5 cups of hot water.

Bring to the boil and then reduce to a simmer. Keep covered and cook for about 40 mins. Soaking can reduce cooking time.

Meanwhile chop your veggies into similar sized chunks.

Finely chop the garlic and ginger and stick of celery.

Put some coconut oil or butter in the pan and fry the curry powder with the ginger, garlic and celery.

After a few minutes add the peanut butter and some of the boiling water and stir until it thickens.

Lower the heat and add the coconut milk and tamari and simmer for a few minutes with occasional stirring.

Now remove from the heat and add the tamari, lemon, and honey.

Pour into a blender and blend to a smooth consistency.

The tofu can be chopped and steamed or lightly fried in some oil. The tempeh is probably best fried.

Assemble your plate or bowl with the rice, veggies, tofu and drench in this scrumptious sauce.
