Greek Salad

This is a classic, delicious and very simple salad to make. Perfect for picnics or bring and shares. If you are vegan you could try adding some roasted cashews instead or even try making some cashew cheese. (recipe to follow)

Serves 4


Here’s what you need

4 large tomatoes chopped or a punnet of cherry tomatoes

3/4 of a large cucumber (peeled if not organic) sliced into half moons

1 tsp of dried oregano or fresh would be even better

2 tbs red wine vinegar

1/4 cup olive oil

1/2 lemon

1 block of feta cheese

A handful of kalamata or other pitted dark olives sliced in half

1/2 finely chopped red onion or a couple of chopped spring onions

Basil (optional)- Could be very delicious though not traditionally in a Greek salad.

Method

Chop all the vegetables and chop or crumble the cheese and put in a bowl, sprinkle over the oregano and dress with the olive oil and vinegar and lemon. Simple as that. No need for salt as the cheese and olives are very salty.
