Vegan Banana and Apple Muffins

These delicious muffins are vegan and incredibly easy to make! They contain a small amount of coconut sugar, which is nutritious and releases more slowly into the blood than regular sugar. They also contain spelt, an ancient grain, which for some is easier to digest then regular wheat.

Makes 12

Here’s what you need

3 ripe bananas

2 red apples

3.5 tablespoons nut milk (any will be fine)

3 tablespoons coconut oil

Dry ingredients:

230g spelt flour

100g coconut sugar or 2 tbs date syrup

Sprinkle of cinnamon

1 teaspoon bicarbonate of soda

1/2 teaspoon baking powder

Method

Preheat the oven to 200 C.

Peel and core one of the apples and chop into small pieces.

Mix the dry ingredients in a bowl. Then in a separate bowl, mash the bananas until they are smooth, add milk and melted oil and stir. Then combine wet and dry and mix well. Pour in the muffin cases.

Cut the remains apple into slices and put three slices on each of the muffins and sprinkle with cinnamon.

Bake for 25 mins. Remove and leave to cool in the try before placing on wire wrack.
